In Sanskrit, the literal meaning of Ayurveda is “science of life”, best described in English as the art of living. It is a system of holistic natural medicine, founded in ancient India by the Rishis (enlightened Yogis, sages and seers) as described in the main text books of Ayurveda, the Charaka Samhita and Ashtanga Hrdadyam. Charaka says in praise of food: “The life of all living things is food and the entire world seeks food. Complexion, clarity, good voice, long life, understanding, happiness, satisfaction, growth, strength and intelligence are all established in food.”
An inappropriate diet is the main physical factor in the cause of imbalance, and a proper diet is essential in preventing and treating it. This is equally true for body and mind. According to Ayurveda, learning to know your specific needs in food is the key to an appropriate diet.
Ayurvedic nutrition is quite different from the contemporary vision of a balanced diet. In Ayurveda, the analysis of food items in terms of vitamins, oligo elements and other components is replaced by the “6 tastes principle”, very subtle according to which each natural food item has a taste, an energy (cooling or heating) and a post-digestive action that will determine its effect on the body as well as consciousness. Food becomes a powerful tool in this manner.
Your basic constitution, your temporary imbalances, your digestive capacity (Agni or Fire in Ayurveda) are therefore crucial elements that will help to establish a balanced diet that will change with the season and weather, even the day of the week. The art of cookery called Paakshaastra in Sanskrit, not only places value of what foods are cooked but also how food is cooked. Ayurveda gives favoured and unfavoured food as well as food quality and sourcing according to our geographical location (Desha Virudha = Place/Geographical location/ Altitude) as well as time and season (Kala Virudha) as well as food combining principles (samyoga virudha).
To comprehend this holistic way of nourishment and to be able to follow its principles in our day-to-day existence you will gather information about harmonious nutrition in relation to time, place, quality, and quantity, the basic constitution and deal with practical aspects and recipes.
Program content
During this program Yogi Manomoyanand will give lectures on Ayurvedic food principles and will give cooking classes on how to prepare a balanced meal according to Ayurveda. This program is an opportunity to benefit from the knowledge of an authentic Yogi and a passionate cook who received the knowledge and practice of Ayurveda from its Source. If weather permits, the program will include some walks to look for forest herbs to integrate to the recipes and cooking outdoors.
This program includes:
- accommodation in a room with ‘Greensleep’ mattress, shower, with bathrobes provided
- organic breakfast, lunch and dinner based on ayurvedic diet principles (excluding drinks)
- lectures will focus on the “Principles of Ayurveda” and “Principles of Cooking”
- cooking classes and learning how to prepare Ayurvedic meals based on the seasons and the days of the week. If weather permits, some forest outings to look for local herbs and cooking in the forest.

About Yogi Manmoyanand
Yogi Manmoyanand is one of the few living teachers of the Saraswati lineage, which goes as far back as to the year 800 AD. He lived and practiced for 7 years amongst a group of ascetics in the caves of the Himalayas.
His knowledge on various yogic and Vedic scriptures were given to him by Yogi Angadanand Saraswati, who wanted him to become a teacher for students of the ashram, but also for students who lead a normal worldly life.
For Yogis, Ayurveda is a yogic practice (Sadhana) that is given to the authentic Yogis after many years of successful practice of Yoga. Yogis study Ayurveda by knowing and being the nature.
Yogi Manmoyanand has been studying and practicing Ayurvedic and natural healing for the last 25 years. Because of his expertise on the subject, for the last twelve years he has been giving lectures and seminars on the subject in various countries.
He has both a traditional and scientific approach to Ayurveda and uses only natural remedies for the treatments and therapy, often handpicked and prepared by him.

La Clairière is 2km from the village of La Petite Pierre in Alsace. It is set in the heart of the forests of the Vosges du Nord Nature Reserve, classified as a UNESCO Biosphere Reserve.

The interior design was inspired by the natural surroundings. It plays on the natural beauty of wood, reflecting the tones and hues of the forest. For nights of peaceful slumber, all our beds have natural latex mattresses and bed linen made from organic wool and cotton.
